Vintage is the process of growing and harvesting grapes to create a wine. A vintage wine is one made from grapes that were all grown and harvested in a single specified year.
The first sign of buds appear on the wine in Spring
This is one of the more critical periods in determining crop load. Warm, dry conditions are ideal to ensure good grapes.
The fertilised flower produces a seed and forms a green grape berry around the seed to protect it.
The grape turns colour from green to purple or yellow as it ripens in the sunlight.
Once the grapes have attained the optimum balance of sugar, acid and flavour they are harvested.
The grapes are pressed and de-stemmed and the juice settled.
Yeast eats the sugar inside the juice and converts it into alcohol. After fermentation we grade and blend our wines.
Red wines are pressed off skins and put into barrels to soften the wine and give it more complexity.
The first wines of the new vintage are ready to be bottled in July. After that it’s time to enjoy!
